Coral Mizuna
Brassica rapa L. var. juncea japonica is a variety of turnip that stands out for its deeply serrated burgundy leaves shaped like oak leaves, contrasting with thin green stems up to 35–40 cm long, with a smooth and slightly feathery texture.
Its texture is crisp yet tender, and its flavor is robust and peppery. Mizuna is known as one of the spiciest members of the mizuna green family.
Property
When left to mature, it produces edible flowers and eventually seeds. Coral mizuna can be harvested young as a microgreen, or as a fully mature leaf suitable for salads, sautéing, braising, and marinating.
This variety is a familiar ingredient in Asian and South American cuisines, as it lends itself well to their naturally spicy and healthy recipes. Pairings include mushrooms, asparagus, hard-boiled eggs, citrus fruits, legumes, grilled and smoked white fish such as trout and sea bass, fried chicken, pork, chili peppers, olives and olive oil, brown butter, creamy sauces, young and aged cheeses such as ricotta and pecorino, pepitas, mint, cilantro, stone fruits, and watermelon.
