Chervil

Green, intense, full-bodied flavor tending toward sweetness

Chervil is a refined and delicate aromatic herb, highly prized in French cuisine and light dishes. Similar in shape to parsley but with a sweeter, slightly aniseed flavor, it is ideal for adding flavor to soups, sauces, salads, and eggs.

Grown using aquaponics, our chervil retains all its organoleptic qualities, offering tender, fragrant leaves that are perfect both as a natural flavoring and as an aesthetic touch in the most creative dishes.

An annual plant belonging to the Apiaceae family, it has finely serrated, light, bright green leaves. Its scent is unmistakable, with notes reminiscent of licorice and anise.

Etymology

The Latin name Anthriscus cerefolium derives from the Greek "chairephyllon," meaning "joyful leaf," in reference to its stimulating and positive effect. In French, it is known as "cerfeuil," a basic ingredient of the famous "fines herbes."

Interesting facts

Known and cultivated since Roman times, chervil was prized for its sweet taste and purifying properties. It was believed to help stimulate the appetite and reinvigorate the body after the winter months. For this reason, it was often used in spring broths and dishes based on fresh vegetables. In medieval gardens, it was grown alongside sage, tarragon, and parsley as part of the fines herbes, the "fine herbs" that symbolized refined and natural cuisine. Rich in vitamin C and minerals, chervil is still not widely used in Italy today, but it is invaluable for those seeking delicate flavors, elegance, and originality in the kitchen.
