Green and red, with a delicate, clean, and crisp flavor

It is an annual plant with leaves that vary in width, shape (oval or elongated) and color (depending on the variety), ranging from green to yellowish to red. Lettuce prefers temperate climates and loose, well-tilled soil, as it has a modest root system that spreads mainly in the topsoil.

Etymology

The name of the genus derives from the Latin lac = milk, referring to the white latex that oozes out when broken; the name of the species comes from satum (past participle of sero, to sow, to plant) sown, planted: that which is sown or planted, cultivated, domestic; the name of the subspecies is an ancient name for chicory.

Property

Rich source of minerals, water, phosphorus, and potassium. The latex it secretes has a mild relaxing effect, making it ideal for dinner, especially for people who are anxious or have insomnia.

Its origin is still rather uncertain, but it seems to come from Siberia. Lettuce was already known to the Egyptians, and its cultivation was promoted by the Romans, who attributed many therapeutic virtues to it.

Interesting facts

Until the Renaissance, cultivation involved very few varieties, which then saw a sharp increase from the 17th century onwards, following the advent of a new technique that allowed for the "forced" rather than spontaneous cultivation of these vegetables.
